3 tablespoons butter
1 tablespoon oil
4 medium ripe tomatoes, roughly chopped
1 medium onion, roughly chopped
15–18 cashew nuts
1-inch ginger, chopped
5 garlic cloves
2 green cardamoms
1-inch cinnamon stick
2 cloves
1 bay leaf
1 teaspoon Kashmiri red chili powder
½ teaspoon turmeric powder
1 teaspoon coriander powder
½ teaspoon cumin powder
Salt to taste
1 tablespoon tomato ketchup (optional, for restaurant-style flavor)
1 teaspoon sugar or honey (optional)
1 teaspoon kasuri methi (crushed)
½ teaspoon garam masala
½ cup fresh cream
1 to 1½ cups water
2 tablespoons fresh cream
1 tablespoon butter
Fresh coriander leaves, chopped
A pinch of kasuri methi
Slivered almonds (optional)

Preparation

Step 1: Prepare the Gravy Base

  1. Heat 1 tablespoon butter and the oil in a pan.

  2. Add bay leaf, cinnamon, cloves, and green cardamoms.

  3. Sauté for 30 seconds until fragrant.

  4. Add onions, ginger, garlic, and cashew nuts.

  5. Cook for 3–4 minutes until the onions soften.

  6. Add chopped tomatoes and cook for 8–10 minutes until they become soft and mushy.

  7. Allow the mixture to cool completely.

Step 2: Cook the Gravy

  1. Heat the remaining butter in the same pan.

  3. Cook for 5–7 minutes, stirring occasionally.
