Step 1: Prepare the Mint-Coriander Paste
Wash the mint and coriander leaves thoroughly.
Remove any thick stems.
Add mint, coriander, green chilies, and ginger to a blender.
Add 2–3 tablespoons of water.
Blend into a smooth paste.
Step 2: Prepare the Jaljeera Mixture
Transfer the green paste to a large bowl or jug.
Add roasted cumin powder.
Add black salt and regular salt.
Add chaat masala and amchur powder.
Add tamarind pulp and lemon juice.
Add sugar or jaggery.
Add black pepper, fennel, dry mint, and hing if using.
Mix everything thoroughly.
Step 3: Add Water
Slowly add 4 cups of chilled water.
Stir well until all the ingredients are combined.
Taste the jaljeera and adjust the seasoning.
Add more lemon juice for extra tanginess.
Add more black salt for a stronger savory flavor.
Add a little sugar if the drink tastes too sharp.
Step 4: Chill the Jaljeera
Cover the jug and refrigerate for at least 30 minutes.
This allows the spices and herbs to infuse into the water.
Stir well before serving.
Step 5: Strain and Serve
Strain the jaljeera through a fine sieve if you prefer a smooth drink.
Pour it into chilled glasses.
Add a few ice cubes.
Top each glass with a spoonful of boondi.
