Step 1: Prepare the Cauliflower
Cut the cauliflower into medium-sized florets.
Wash the florets thoroughly under running water.
Bring a large pot of water to a boil.
Add a little salt and turmeric to the water.
Add the cauliflower florets.
Blanch them for 3–4 minutes.
Drain the cauliflower completely.
Let the florets cool and dry before cooking.
Tip: Do not overcook the cauliflower while blanching. It should remain slightly firm.
Step 2: Sauté the Cauliflower
Heat 1½ tablespoons oil in a wide pan.
Add the cauliflower florets.
Sauté them over medium-high heat for 6–8 minutes.
Stir occasionally so they brown evenly.
Cook until the edges become lightly golden.
Remove the cauliflower and keep it aside.

Step 3: Prepare the Masala
Heat the remaining oil in the same pan.
Add cumin seeds and let them crackle.
Add asafoetida if using.
Add the chopped onions.

Add the chopped tomatoes.

Mix everything thoroughly.
Cook the masala for 2–3 minutes on medium heat. Add a splash of water if the masala starts sticking to the pan.
Step 5: Add the Cauliflower
Add the sautéed cauliflower to the masala.
Add green peas or bell pepper if using.
Mix gently until the masala coats every floret.
Add ¼ to ½ cup water.
Cover the pan with a lid.
Cook on low heat for 8–10 minutes.
Stir occasionally to prevent sticking.
Cook until the cauliflower becomes tender but does not turn mushy.
Step 6: Finish the Gobhi Masala
Remove the lid.
Add garam masala and amchur powder.
Sprinkle crushed kasuri methi.
Mix gently.
Cook uncovered for another 2–3 minutes.
Add butter or cream if you prefer a richer flavor.
Turn off the heat.
Garnish with fresh coriander leaves.
