500 g fresh bhindi (okra)
3 tablespoons oil
2 medium onions, thinly sliced
2 medium tomatoes, finely chopped
2 green chilies, slit
1 teaspoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon kasuri methi (crushed)
2 tablespoons fresh coriander leaves, chopped
½ teaspoon turmeric powder
1 teaspoon red chili powder
2 teaspoons coriander powder
½ teaspoon cumin powder
½ teaspoon garam masala
½ teaspoon dry mango powder (amchur)
Salt to taste

Method

Preparation of Bhindi Masala

Step 1: Prepare the Bhindi

  1. Wash the bhindi thoroughly under running water.

  2. Pat it completely dry using a clean kitchen towel.

  3. Trim both ends and cut into 1½-inch pieces.

  4. Ensure the bhindi is completely dry to prevent sliminess while cooking.

Step 2: Sauté the Bhindi

  1. Heat 2 tablespoons oil in a wide pan.

  2. Add the chopped bhindi.

  3. Cook on medium heat for 10–12 minutes, stirring gently until tender and lightly browned.

  4. Remove from the pan and set aside.

Step 3: Prepare the Masala

  1. Heat the remaining oil in the same pan.

  2. Add cumin seeds and let them splutter.

  3. Add sliced onions and sauté until golden brown.

  4. Stir in the ginger-garlic paste and green chilies. Cook for 1–2 minutes.

  5. Add chopped tomatoes and cook until soft and the oil separates.

  6. Mix in turmeric, red chili powder, coriander powder, cumin powder, and salt. Cook for 2–3 minutes.

Step 4: Combine Everything

  1. Add the sautéed bhindi to the masala.

  2. Sprinkle garam masala, amchur, and crushed kasuri methi.

  3. Toss gently to coat the bhindi without breaking it.

  4. Cook for another 3–4 minutes on low heat.

  5. Garnish with fresh coriander leaves.
