Preparation
Step 1: Soak the Dal
Wash the whole urad dal and rajma thoroughly.
Soak them together in plenty of water for 8–10 hours or overnight.
Drain and rinse before cooking.
Step 2: Cook the Dal
Transfer the soaked dal and rajma to a pressure cooker.
Add 5 cups of water and 1 teaspoon salt.
Pressure cook:
10–12 whistles in a traditional pressure cooker, or
40–45 minutes in an electric pressure cooker.
The dal and rajma should be completely soft. Lightly mash a small portion to create a creamy texture.
Step 3: Prepare the Masala
Heat butter and oil in a heavy-bottomed pan.
Add cumin seeds and bay leaf.
Once fragrant, add the chopped onion and cook until golden brown.
Stir in the ginger-garlic paste and green chilies. Cook for 2 minutes.
Add the tomato puree and cook until the butter begins to separate.
Mix in the Kashmiri red chili powder, turmeric, coriander powder, cumin powder, and salt.
Cook the masala for 4–5 minutes.
Step 4: Combine the Dal
Add the cooked dal and rajma to the prepared masala.
Mix well and add water if needed to adjust the consistency.
Simmer over low heat for 30–40 minutes, stirring occasionally to prevent sticking.
Add garam masala and crushed kasuri methi.
Step 5: Finish the Dal Makhani
Stir in the fresh cream.
Add the remaining butter and simmer for another 2–3 minutes.
Garnish with a swirl of cream and chopped coriander leaves before serving.
